First, you must use CUC pesos (only for visitors and have no value outside of Cuba). CUP is only for Cuban citizens. You can change your money in Cuba, either at the airport or station, you will be accommodated.
Also, remember that if you exchange funds from the United States, you will be charged. It is therefore preferable to use CAD or Euros for a better exchange rate.
You are not far from Havana, it should try to book a visit or for a day trip or overnight there. Your tour group can arrange your trip to the station. During your orientation meeting, all will be explained and how to book your excursions and sites that are great to see.
Go to neighboring cities and get a real feel of Cuba.
Check Cayo Piedra Underwater Park (wonder where tropical fish and sea creatures from the wreckage to collect) and the Centre Plaza Amedrica (malls, restaurants and recreation centers).
There is also Ambrosio Cave and Matanzas City.

But you have an amazing time there! Cuba is a beautiful island, but the Cuban people who "make" your holiday.
If this is your first time to Cuba at all, it would be nice to take some small souvenirs or "gifts" for some Cuban friends you meet. They really appreciate the things we take for granted, such as pens or pencils, makeup, erasers, paper, magazines, soaps and toiletries ... things like these (a few things to dollarstore). And if you have clothes that are used and in good condition, these will go a long way for them too and they will be very grateful for every little thing you do for them. Cubans have dignity and self respect, even if they are taken, but are grateful for the kindness and generosity. They are friendly people.

You can not buy the CUC convertible peso which is used by tourists everywhere except in Cuba but you can buy them at the airport when you arrive or at your station. It is best to use them all before you go home or you can return to Canada at the airport when you leave. Personally, I like to hang on to some of my next visit and chance, if you go once you get back. The visit most people say is the highlight of their visit is a visit to Havana is incredible and something you never forget, the price should be around 75 CUC but I do have not done for about three years so maybe the price is higher now. In Varadero, there is a double-decker bus that goes up and down Varadero, it gives you a nice afternoon or morning, the price of 5 CUC for a day ticket you get on and off wherever and whenever you want. If your a Cuban resort offers a lobster dinner in their home to go that would be a real revelation and they are good. Varadero has everything, deep sea fishing, swim with dolphins, sunset cruises, jungle tours, you name it is there. I have included links, one with some of my photos of Havana.
